Recipes:

Red Chili with Dolcetto

Ingredients:

1 lb. ground chuck

1 lb. breakfast sausage

1 cup diced onions

2 oz. Dolcetto Wine

3 cups kidney beans

2 cups condensed tomato soup

2 T. chili powder

1 T. cumin

1 tbsp. flour

4 oz water

1 tsp. cayenne pepper

Salt & Pepper to taste

Procedure:

1.  Brown the ground chuck and breakfast sausage in 3 T. of olive oil.

2.  Add and cook onions and garlic for 10 minutes; Deglaze with Dolcetto wine.

3.  Add kidney beans and tomato soup.

4.  Make into a paste and blend in chili powder, cumin, cayenne pepper, flour and water.

5.  Cook over low heat, stirring frequently for 45 minutes to 1 hour.

6.  Season with salt and pepper to taste.
