Chipotle Turkey Meatloaf |
INGREDIENTS
- 1/2 cup turkey bacon, chopped
- 1 carrot, chopped
- 1 yellow onion, chopped
- 1 cup crimini mushrooms, sliced
- 1 Tbsp. garlic, minced
- 2 Tbsp. olive oil
- 1/2 cup 2009
BARGETTO Merlot
- 1 tsp. chipotle pepper, chopped
- 2.5 lbs. ground turkey
- 2 egg yolk
- 1/2 cup panko bread crumbs
- 1 Tbsp. tomato paste
- 1/8 cup fresh oregano, chopped
- 2 tbsp. Italian seasoning
- Salt and pepper

DIRECTIONS
yield: serves 4
Vegetables
- over medium heat in a large saute pan add the bacon. Saute bacon for 8-10 minutes.
- Add the oil, onions, carrot, garlic and mushrooms. Saute for 7 minutes and deglaze with BARGETTO Merlot
- Place on plate and let cool.
Meatloaf
- Preheat oven to 400° .
- In large bowl combine cooked vegetables, ground turkey, chipotle, oregano, Italian seasoning, tomato paste, egg, salt, pepper and panko. Mix well.
- Spray all four sides of the loaf pan with non-stick spray.
- Place meatloaf in loaf pan, cover with foil and place loaf pan in oven for 45 minutes or 145 degrees.
- Carefully remove foil and place loaf pan back in oven for 10 minutes, remove from oven and cool for 15 minutes.
- Serve with your favorite gravy, mashed potatoes and seasonal vegetables.
